Zucchini Bread

I had two big zucchinis that boyfriend brought home so I decided to make zucchini bread. I made one loaf of bread and used the rest to make muffins.

Here are the muffins topped with homemade cream cheese frosting. They don't look fancy but they were really good. Here's the recipe:

2 eggs
1 1/4 cups sugar
2 tsp sugar
2/3 cups melted butter
3 cups grated and seeded zucchini
2tsp baking soda
1/4 tsp salt
3 cups flour
1/2 tsp nutmeg
2 tsp cinnamon

Heat your oven to 350 degrees. Mix sugar, eggs, vanilla and butter. Then mix in zucchini. In a separate bowl mix baking soda, salt, flour, cinnamon and nutmeg. Slowly pour flour mixture into zucchini mixture. Pour batter into two loaf pans. Bake for 60 minutes.
